Instructions

  • Bring the lentils and water to a boil in a large pot over high heat.
  • Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender.
  • Heat the olive oil in a separate pan over medium-high heat.
  • Sauté the onion, carrots, celery, and garlic for 10 minutes, or until the vegetables are tender.
  • Cook for another 2-3 minutes after adding the thyme, cumin, and smoked paprika.
  • Add the sauteed vegetables and lentils to the pot.
  • Bring the vegetable broth to a simmer.
  • Simmer for 10-15 minutes, or until the soup is thoroughly heated and the flavors have blended.
  • Cook until the spinach leaves have wilted, about 2-3 minutes.
  • Season to taste with salt and pepper.
  • Serve immediately.
