This Mexican-inspired dinner is a delicious and healthy meal that comes together quickly. Rice, black beans, avocado, tomatoes, corn and shredded cheese combine to make a flavorful and filling dish that will satisfy your taste buds. It's ideal for a quick weeknight meal or a lazy weekend dinner.

  • Cook Time: 20 minutes

Instructions

  • Cook the rice according to the package directions.
  • Rinse and drain the black beans while the rice is cooking.
  • Set aside the avocado dice.
  • Cook the corn kernels and diced tomatoes in a skillet over medium heat.
  • Cook for 5-7 minutes, or until the vegetables are tender.
  • When the rice is done, add the black beans.
  • Divide the rice and bean mixture among four serving bowls.
  • The corn and tomato mixture should be placed on top of each bowl, followed by the diced avocado.
  • Serve with shredded cheese on top of each bowl.
