Potato and Lentil Soup with Carrots and Ham Recipe
A hearty and flavorful soup ideal for a chilly day. The combination of potatoes, lentils and gammon creates a filling and satisfying meal. This recipe is also simple to adapt with your preferred vegetables and spices.

- Total Time: 45 minutes
- Warm the olive oil in a large pot or Dutch oven over medium heat.
- Cook until the onions and garlic are fragrant and softened, about 3-4 minutes.
- To the pot, add the potatoes, lentils, carrots, thyme, paprika, and broth.
- Bring the soup to a boil, then reduce to a low heat and simmer for 20-25 minutes, or until the potatoes and lentils are tender.
- Puree the soup with an immersion blender until smooth.
- (alternatively, transfer the soup to a blender and puree in batches).
- Cook the diced gammon in the pot for 5 minutes, or until heated through.
- Season the soup to taste with salt and black pepper.
- Serve immediately, garnished with fresh parsley, if desired.
