Potato and Lentil Soup with Carrots and Ham Recipe

A hearty and flavorful soup ideal for a chilly day. The combination of potatoes, lentils and gammon creates a filling and satisfying meal. This recipe is also simple to adapt with your preferred vegetables and spices.

  • Prep Time: 15 minutes
  • Cook Time: 30 minutes
  • Total Time: 45 minutes

Instructions

  • Warm the olive oil in a large pot or Dutch oven over medium heat.
  • Cook until the onions and garlic are fragrant and softened, about 3-4 minutes.
  • To the pot, add the potatoes, lentils, carrots, thyme, paprika, and broth.
  • Bring the soup to a boil, then reduce to a low heat and simmer for 20-25 minutes, or until the potatoes and lentils are tender.
  • Puree the soup with an immersion blender until smooth.
  • (alternatively, transfer the soup to a blender and puree in batches).
  • Cook the diced gammon in the pot for 5 minutes, or until heated through.
  • Season the soup to taste with salt and black pepper.
  • Serve immediately, garnished with fresh parsley, if desired.
