Mung Beans Snack Bowl Recipe

This Mung Beans Snack Bowl is a nutritious and tasty snack or light meal. Mung beans are high in protein and fiber, and fresh vegetables and herbs add crunch and flavor. The roasted peanuts provide a satisfying nuttiness as well as crunch. This dish is ideal for a quick lunch or a snack on the go.

  • Prep Time: 10 minutes
  • Cook Time: 25 minutes
  • Total Time: 35 minutes

Instructions

  • Rinse and drain the soaked mung beans.
  • Add the mung beans, salt, black pepper, cumin powder, coriander powder, turmeric powder, and enough water to cover the beans to a large pot.
  • Bring the water to a boil, then reduce to a low heat.
  • Simmer the beans for 20-25 minutes, or until tender.
  • In a skillet over medium-high heat, heat the olive oil while the beans are cooking.
  • Sauté the diced onion for 2-3 minutes, or until translucent.
  • Cook for an additional 2-3 minutes after adding the diced tomato and cucumber to the skillet.
  • Drain any remaining liquid from the mung beans and transfer to a large mixing bowl.
  • To the bowl with the mung beans, add the sauteed vegetables, cilantro, lemon juice and roasted peanuts.
  • Adjust seasoning to taste with more salt, black pepper, or lemon juice if desired.
  • Warm or room temperature, serve the mung bean snack bowl.
