Rice and Mung Beans with Chili Peppers Recipe

This recipe for Rice and Mung Beans with Chili Peppers is a simple and flavorful dish that is ideal for a quick and easy meal. Mung beans and rice are cooked in a pot together with chilli peppers for added spice and flavor.

  • Cook Time: 25 minutes
  • Total Time: 1 hour

Instructions

  • Soak the mung beans and rice for 30 minutes in cold water.
  • Drain and set aside the water.
  • Warm the vegetable oil in a large pot over medium heat.
  • Fry the chilli peppers for 1-2 minutes, or until fragrant.
  • Stir together the mung beans and rice in the pot.
  • Add 4 cups of water and the salt.
  • Bring to a boil, then reduce to a low heat.
  • Cook, covered, for 20-25 minutes, or until the rice and beans are tender and the water has been absorbed.
  • Remove from the heat and set aside for 5 minutes.
  • Serve the rice and beans hot, fluffed with a fork.
