White Kidney Bean Soup with Onions and Tomatoes Recipe

- In a large pot, heat the olive oil over medium-high heat.
- Sauté the onion and garlic for 2-3 minutes, or until the onion is translucent.
- Cook for another 2-3 minutes after adding the diced tomatoes.
- Combine the white kidney beans, chicken broth, thyme, salt, and black pepper in a mixing bowl.
- Bring the soup to a boil, then reduce to a low heat and cook for 20-25 minutes, or until the beans are tender.
- Remove the pot from the heat and set aside for a few minutes to cool.
- Blend the soup with an immersion blender or a regular blender until it is smooth and creamy.
- Return the soup to the pot and warm it through on low heat.
