White Kidney Bean Soup with Onions and Tomatoes Recipe

This filling soup is high in protein and flavor. White kidney beans, onions and tomatoes combine to make a delicious and filling dish that is ideal for lunch or dinner.

Ingredients

Time Needed

  • Prep Time: 10 minutes
  • Cook Time: 30 minutes
  • Total Time: 40 minutes

Instructions

  • In a large pot, heat the olive oil over medium-high heat.
  • Sauté the onion and garlic for 2-3 minutes, or until the onion is translucent.
  • Cook for another 2-3 minutes after adding the diced tomatoes.
  • Combine the white kidney beans, chicken broth, thyme, salt, and black pepper in a mixing bowl.
  • Bring the soup to a boil, then reduce to a low heat and cook for 20-25 minutes, or until the beans are tender.
  • Remove the pot from the heat and set aside for a few minutes to cool.
  • Blend the soup with an immersion blender or a regular blender until it is smooth and creamy.
  • Return the soup to the pot and warm it through on low heat.
