Instructions

  • Cook the bacon in a large pot over medium heat until crispy.
  • Remove and set aside the bacon.
  • Cook until the onion, garlic, and bell peppers are translucent in the bacon fat.
  • Cook until the mushrooms release their liquid and begin to brown.
  • Stir in the cumin and smoked paprika to combine.
  • Combine the black beans, bay leaves, chicken broth, and olive oil in a mixing bowl.
  • Bring to a boil, then reduce to a low heat and continue to cook for 2-3 hours, or until the beans are tender.
  • Remove and discard the bay leaves.
  • Season to taste with salt and black pepper.
  • Serve immediately, garnished with the reserved crispy bacon.
