Instructions

  • Cook the tagliatelle noodles until al dente according to package directions.
  • Set aside after draining.
  • Meanwhile, heat the olive oil in a large saucepan over medium-high heat.
  • Sauté the chopped onion and red bell pepper for 5 minutes, or until softened.
  • Stir in the minced garlic, cumin, smoked paprika, dried oregano, and cayenne pepper to combine.
  • To the saucepan, add the drained and rinsed kidney beans, black beans, and cannellini beans, as well as the undrained can of diced tomatoes and vegetable broth.
  • Bring everything to a boil, stirring constantly.
  • Reduce the heat to low and continue to cook for about 10 minutes, or until the beans are heated through and the flavors have combined.
  • Season with salt and pepper to taste and serve the bean mixture over the cooked tagliatelle noodles.
